COWBOY CAVIAR
An easy summer snack that makes use of local tomatoes and honey

2 cans of black beans, drained and rinsed
1 can of pinto beans, drained and rinsed
2 tomatoes, diced*
2 bell peppers, diced
1 red onion, diced*
2 cloves minced garlic*
3/4 cup fresh cilantro, cut
1 seeded jalapeno pepper, minced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon chili powder
Dressing
¼ cup white wine vinegar
½ cup olive oil
3 tablespoons sugar
1 tablespoon of honey (or more to taste)*
Juice of 2 limes
* Sourced locally
Mix together the ingredients for the dressing in a small bowl. Combine all other ingredients in a separate bowl and add the dressing. Served immediately with tortilla chips or prepare in advanced and store in refrigerator for 2-3 days.
